Fresh Shitaki Mushrooms with Asparagus
10 fresh organic shitaki mushrooms
Don’t soak in water to clean:
but wipe each one with care w/ moist towel
3 lbs fresh organic asparagus
Soak in H202 and break off ends and throw away
1 yellow onion
½ c toasted pine nuts (be careful not to burn)
Saute shitaki mushrooms and onions
for 10 minutes w/ ghee
Grapeseed oil, or coconut oil
Add: 2 tbl Braggs
1 tbl Mirin
1 tbl toasted sesame oil
Asparagus
Saute for a few more minutes
asparagus should have crunch
Remove from heat
Add pine nuts and toss
